EDIT: one further argument would be that I have found no convincing argument for the existence of a god.

Intelligence doesn't require a designer.
So they can stop right there before any further discussion about non-existent designers even begins. Evolutionary Biology provides a rather satisfactory set of clues, about why and how it might have evolved.
Just because a question is not completely answered does not justify cooking up pretend answers.

I would explain there are many stories of gods, yet we don't have any gods running about, same as with pixies and leprechauns. You know? Just open your eyes, I would explain.

Afterthought: I would explain "You see the message, I see the myth." Or if I was talking to someone who wasn't religious I would just say "I see the myth."
