I have two recipes you might appreciate Smile
Fairly quick both of them, but as these are warm breakfasts they still take a small bit of time!

The first one is a fried sandwich, my own invention from fusing a couple indian snack recipes and it's quite tasty!

You need;
1 ciabatta bread
a bunch of fresh coriander leaves (at least a good handful)
½ a smallish onion
1 good size tomato
1-2 green chilies
some salted butter, blackpepper and salt

Just cut a piece of bread as big as you wish to eat, split it horizontally in two slices.
Chop all the vegetables & coriander into small pieces, put in a bowl except for onion:
Melt some butter on the pan and fry the onions gently to remove some raw flavor, then mix in to the other vegetables.
after this, fry the bread halves in the remaining butter for about a minute.
grind black pepper on the loafs before spreading on them the vegetable-chili mixture, and after this sprinkle with a little salt. Enjoy! I love this recipe, I make it many times a week. It works for a lunch also, or for an evening snack.

Another recipe would be a nice omelette with vegetables in it. You'll need:

3-4 eggs (or as per your liking)
1 green chili
1 small onion or spring onions
2-3 garlic cloves, depending on size
fresh coriander
a little lime juice (can be left out if you don't happen to have fresh limes)
black pepper & salt

if you want to serve this on top of bread (nam!) then keep a couple slices of that too at hand.
- You can fry this in either butter or oil as per your liking.

Just chop all vegetables very small, herbs a little less small, beat the eggs in a bowl and mix these all together, not forgetting salt and black pepper. Fry, and serve hot!
