Keep reading.... they kill all the livestock and then a plague or two later they infest the livestock with boils/disease/something (don't have time to look up the details)

It's probably because these have been two different stories from different authors that were merged at a later date, just like Genesis was. (J & P source)

But still, why didn't the redactor see the obvious faults in the story?

I suppose it didn't matter, they knew that only the priests would actually be reading it and they could explain it -if anyone had the nerve to ask any questions.

The bible wasn't meant to have people critical of it break it down and try to make sense of it.
