I've never even tried gumbo before. I googled it just now, and I can't even fathom what the flavor profile must be because I've never had some of the key ingredients.

I do know that people flip over backwards for this stuff. Jimmy Buffett will play for it, too.

There are variations of gumbo to be found along the gulf coast. For me, it needs to start with a dark rue and, making that is an art in itself. I like shrimp, chunks of crab, file' and okra in mine. The Cajun folk really know how to make it right. C'est si bon

The LEADBEATER'S POSSUM is a shy small, highly agile (making breathtaking leaps from tree to tree), nocturnal marsupial—a pouched mammal—restricted to the tall eucalypt forests of Central Victoria.
