The use of an apostrophe in this case is to show that a letter is missing.
ie: Don't = do not. The apostrophe takes the place of the 'o'.
It can also take the place of several letters, ie: she'd = she would.

In every case I can find with the use of an apostrophe as a substitute for a letter it's always word than apostrophe.
So ie: it is = it's.
The word being shortened always comes second.

The other thing is that English words are not limited to 1 meaning only.

ie: date, engaged, net, rose, right etc..


Combining these two key elements of the English language one can safely concluded that 'you'll' is correct and 'y'all' is just fucking retarded.

By that logic, "willn't" is correct and "won't" is retarded.

There's also a thing called acceptable use. "Willn't" isn't acceptable use regardless if it's denotatively correct; just like "you'll" does not equate to "you all". It equates to "you will/shall".

"Y'all" is not only denotatively correct, it's also acceptable use.
