London would be easy for me since I live here already. But Paris and Brussels are just a train ride from here, and I can get to Amsterdam in just over 4 hours by train. (I don't like flying)

The UK is fairly cheap to get out of really. You can get the EuroStar to Paris and Brussels for a reasonable price if you book in advance, or Le Shuttle from Folkestone to Coquelles if you have a vehicle. There are the ferries from Dover to Calais that are cheap and frequent. Then there are also really cheap coaches if you wanna do it really cheap.
As for accommodation, I find Ibis hotels to be cheap and all over the place.

ETA: I just had a look at my roster for this year, and I see that I have 2 of those dates booked off already, and the other is meant to be my day off that week anyway. Sweet!
