I make on occasion "poor man burgers", which are tasty enough and good for a lean budget.
You need ground beef, loads of ground paprika, garlic in any form, black pepper, cayenne pepper, chopped onions, salt, perhaps an egg or two and mushrooms if you're into them. Mix the ingredients in a bowl and fry them in a pan, preferably in butter. The rest is up to you.

I agree with Rev and Chas on this.

Here Heston uses camel meat but his method applies just as much to beef. Egg isn't necessary as a binder. If your mince has thawed with a high water content then you should drain it and let it sit on some paper towels. If your mince is not sloppy it will form patties fine without a binder.





I think it comes down to good beef and good buns. Whether the bun should be soft (like a BigMac bun) or crusty seems to be a matter of personal preference, I don't know whether there is a purist ruling--a burger fatwa Smile--on this matter.

BBQing is better than frying or a hotplate because you not only get a good sear but the smoke can be used to impart a subtle flavour to the beef.

As for variations I like using aioli instead of tomato sauce (aka ketchup).

Get good ground beef, your favorite brand of bacon, your favorite type of cheese (blocked cheese), and I like Bell peppers but those are optional.
---
1. Fry the bacon, then cut it up into pieces (like dicing a fruit or vegetable)
2. Cut small cubes of cheese no bigger than your finger nail.
(optional: dice Bell peppers)
3. Get out your meat, and mix it in with all the ingredients. Then shape your patties.
4. Grill with your favorite type of charcoal/wood. Then serve with your favorite condiments!

I wont tell you what goes in my burgers, but here's what I put on them:

bun:
- fresh kaiser or large croissant (grilled VERY lightly on inside)

veggies:
- grilled onion
- oven roasted tomato slices with fresh parmesan, olive oil, salt, pepper, oregano and garlic

toppings:
- Mustard (spread lightly on bun)
- Guac with a bit of cilantro and bacon bits
- Nando's garlic peri peri sauce (used sparingly)
- Microwaved cheddar (in a bowl with flat bottom, creates a crispy and delicious cheese disc about the diameter of a burger)

dip:
- Chili oil (Basically hot peppers infused in olive oil)



And yeah, I DID just make that up...
But this weekend, I will make it HAPPEN.
