The outstanding book for me on the history of baseball is Baseball: The Golden Age by Harold Seymour (1971). It is a a wide-ranging examination of the personalities, events and organisations of the professional game from 1903 to 1930.
(This is actually volume 2 of 3, but I found it the best.)
