An average sized human, prepared in the same manner as a deer, would probably provide about 60 pounds of meat. Eating all meat and organs, allowing the blood to congeal (aka blood tofu) for immediate consumption or storage, breaking the bones open for marrow, etc., you could probably sustain yourself, with minimal to moderate physical exertion, on an average sized human for more than a month. Longer if you don't splurge and accept the fact that you're going to lose a bit of weight.
