Surprisingly, I lost a pound, but I think that's because it hasn't quite hit my system yet. But I've also been having A LOT of yoga classes lately so I think that helped to burn off yesterday's feast Big Grin I was going to scale back today but now I'm going to wait and see. I like to try and maintain the weight that I'm at because I used to be a twig in high school (103 pounds at 5'6''). I can lose weight fast because I'm so active and have A LOT of energy if I don't watch it. Anyway, now that I do have T & A, I don't want to lose that Big Grin

I found an overgrown zucchini yesterday and made stuffed zucchini.

Cut the zucchini lengthwise, hollow out the seedy part. You can really stuff it with whatever you want - I did Italian with thick, meaty spaghetti sauce I made and topped with cheese. Bake until it's hot through and through.

Yum! Perfect thing to do with big zucchinis. You can also use tofu instead of the meat in the sauce, or go totally different with like chicken and alfredo sauce, or anything you would top a pizza with.

Over here we call zucchini courgettes and over grown ones are called marrows they are lovely stuffed with bacon and onion and roasted in the oven.

2 steamed artichokes
Two dates with raw walnut butter (it's like a healthy peanut butter cup). I think it was the Deliciously Ella cookbook that came up with that idea. Freakin' genius Yes

I'm trying yet again to be that person that plans meals in advance.

Tonight, I'm thinking if the steak isn't defrosted enough, I"ll be going with some stuffed chicken breasts I've got stashed in the freezer.

Then tomorrow, maybe steak or maybe the chicken....

Wednesday meatloaf with mashed potatoes...Hmmm mashed potatoes could go with the steak too...

Thursday left overs...

Friday probably breakfast for dinner featuring Hawaiian flair...(Portuguese sausage) with POG and sliced papaya and guava

Back to basics. T-Bone steak, green beans and baked potato. The steak was on sale.

Well there goes my fucking meal plan for the week....

Seriously the fucking eclipse is going to make me crazy...

Now it seems we're having steak and mashed potatoes tonight...

Stuffed chicken with left over mashed potatoes (salad and veg)

Then the rest of the week, I'm just not sure....the meatloaf will have to wait until the weekend. Because from what I've been reading stores and roads are going to packed this weekend.

I'll have to plan ahead for something else on Sunday that will hopefully get us through until Monday or Tuesday....

One of the great benefits of living alone - open fridge in morning - surveil - take something out of freezer if nothing edible for dinner is visible in fridge.
