Mushrooms
I love them. I can't think of a thing that doesn't get better with mushrooms.

My favorites are chanterelles. But the only way I can get them here is dried.

Since the texture here is just as important as the flavor, I just can't get happy with them.

Anyone have a good way to prepare dried mushrooms?

I usually just saute them in a little butter. You can add a touch of garlic if you like, but it can mask the flavor of the mushrooms too much.

I totally agree! Mushrooms are the best and everything does taste better with them. Soup, sauces, pizza, quiche, burgers... everything! (Except pancakes.)

Chanterelles don't plump at all if soaked so, I can only think sautéing them might plump them, without turning them to mush.
Try it with a very light oil on very low, at first just to coat them and then maybe simmer with the lid on a bit, before turning up the heat.

My wife has an intolerance to them. Not an allergy - they won't kill her or anything, but she will have violent stomach issues if she eats them. So, any time she's out of town for business or out for a girls' night first thing the kids and I do is order a large mushroom pizza. I totally love mushrooms.
