Fall means nice, ripe, sweet bell peppers. Here's your recipe:

Mega easy grilled peppers.

Cut peppers into chunks. (a big pepper should give you four or five pieces. Keep them fairly big)
Place in freezer bag and add enough Italian dressing to coat. Remove as much air as possible, and marinate in fridge for at least an hour. They will keep for up to 24 hours, so it's a very easy thing to make any time you feel like it.
Put marinated peppers on grill, skin side down. Cook until the skin just starts to blacken (there should just be a couple blisters on each piece) Flip and grill for a couple minutes on the flesh side. Don't over cook. Keep the peppers firm. The cooking is to bring out the sweetness and make them tender. Not mushy. Especially for you, since you hate mushy. Wink

These will go good with ANY grilled meat, but I like it with beef the best. A nice lean pork chop runs a close second.

Well, another two miles last night - yay! - and boy did I need it. My body is starting to get to where, if I don't partake in some kind of physical activity, it craves it. I'll feel kind of stiff and uncomfortable in my own skin (I work in an office, and so sit on my derriere all the day long) and get an actual urge to work out all the kinks.

I've been eating lots better, too. On the days I do have a soda, it's just one, and most days I haven't been having one at all. Food-wise, I'm starting to associate bad foods with bad feelings (of sluggishness, etc.) and so am more or less naturally avoiding them. I had a good dinner last night - a romaine lettuce and baby spinach salad with chicken breast fajita meat mixed in (I got the bagged kind that you just heat and eat and it's seasoned like fajitas so there's a good taste to it, too) and Italian dressing and then my "dessert" was a handful of almonds. I had a Vitamin Water to go along with it - dragonfruit is the best flavor! So yeah, the food thing is going pretty well, I think.
