If you want to pay extra for something you're going to throw away - have at it.

I don't eat pork fat anymore than I have to - and I don't believe bone adds flavor.

At least I've never noticed a difference.

I prefer the leanest pork loin. Best marinaded in red wine then slow cooked on the grill with bbq sauce....

That's how my mom always used to make it, just salt and pepper. Then she made gravy with the melted fat. Absolutely terrible for you health wise, but delicious. Thumbsup

Red wine is the trick. I do it for loin and for Boston butt as well, plus, I'll baste them with a little butter while they're grilling ... add a nice caramelization to it.

Pork chops and pork loin are NOT the same thing. The cut of meat changes a whole slew of things, including how it cooks, how much flavour it will absorb, and ultimately, what it will taste like. It's pork for Petes sake...how it's cut is a important as where it's cut!


I like pork chops. I like pork loin. But I wouldn't do either of them the same every time. I marinate, grill, smoke, slow cook, roast, whatever. Variety people, variety.

So many cats, so few good recipes.

Center cut (bone-in)

I just cooked up one right now and came up with the best seasoning ever for it:

Sea salt
Black pepper
Paprika
Garlic powder
a pinch of Chinese 5 spice

Makes the best damn tasting pork chops!
