Are those sensory systems confined to that which is objectively observable?

Sound

What evidence besides sensory input do you accept? For example, scientists inform us there are ranges of sight and sound unknown with the unaided eye or ear.

We can measure the other waves of energy; from radio waves to microwaves, ultraviolet, X and gamma rays. Just because we can't perceive the ultraviolet spectrum ourselves doesn't mean we can't accept the abundant evidence we have for it's existence.
