Quick and Dirty Spaghetti
Ok -- a can of Spaghetti-o's might be faster --- but I think I can do better -- even in a hurry....

Quick and Dirty Spaghetti

1 LBS (or thereabouts) Italian sausage (I use my own - venison - and it's quite spicy).
2 cans tomato sauce
1 tsp sugar (I use a bit of maple syrup).
One diced onion (optional)

You want to use a sausage that has a casing -- cut into "meatball" sized pieces - and cook thoroughly in the oven at about 325 f for 16-25 minutes -- till fully cooked through. Drain off any grease (nice part about venison - no grease)

drop in saucepan with 2 cans tomato sauce (I like Hunts) - add one 1 tsp sugar. (it knocks down the acidity of the tomato sauce) Add diced onion. Simmer covered 20 minutes or so.

Make up your pasta as usual.

You're done.

And it beat's the Chef (Boy-ar-dee)

No seasonings? Shocking

Hmmm...

Marinara (with or without meat)

1 - 16oz can crushed tomatoes
1 - 16oz can diced tomatoes
1 small onion, diced
8oz sliced mushrooms (optional)
1 Tbls dried parsley
1/2 tsp garlic powder or 1 clove crushed
1 tsp Italian Seasonings Blend
1/2 tsp sugar (optional)
1/2 tsp salt
1/4 tsp pepper
1 Tbls Olive oil (or vegetable oil)

Sauté onions and mushrooms in oil in med-lrg skillet until mushrooms wilt and onions are clear. Add seasonings, simmer 1 minute. Stir in tomatoes and simmer 30 minutes. Pour over cooked pasta of your choice.

If you want to add sausage or meatballs cook them separate and add them when you add the tomatoes. You can also top with shredded Italian cheese blend.

Can I post a quick and dirty chicken enchilada casserole?

Chicken Cheese Enchilada Casserole

Preheat oven 350
2 C. Cooked Chicken Meat (2 lrg cans)
1 Small Onion chopped, sauté until clear
3 C. Shredded Colby-Jack Cheese
1 Can Cream of chicken soup
Milk
½ tsp. Salt
1, 12oz Jar Salsa
Salted Tortilla chips

In a 13x9 pan spread a layer of chips and crush until about a 1” layer.

In a large bowl combine cooked chicken meat, onion, 1½ cups shredded cheese, can cream of chicken soup, 1 can milk, 1- 12oz jar salsa, ½ tsp salt. Mix well. (should be slightly soupy) Spread this over crushed chips evenly. Cover with foil and bake 45 minutes. Remove foil top cover with other 1 ½ cup cheese and heat another 10 minutes. Let set for ten minutes and serve with sour cream and salsa.


Beefy Cheese Enchilada Casserole

Same as above only swap chicken for 2 Cups cooked ground beef and omit the soup and milk. Prepare the same.
