Also want to cringe if I hear certain phrases such as "God's Chosen People" or listen to a Children's Sermon with mention of Noah's Ark.

Why?

Atheism is not a reaction against anything. It is simply a lack of belief in a god or gods. There may be atheists that do react to those things, but it has nothing to do with the definition of the term. It simply means lack of belief in a god. It is nothing more than a default position without belief.

An atheist's thoughts on various aspects of the Bible are going to be based on the other elements of their worldview, ie humanism, rationalism - however it is they happen to set up their perspective of the world. Atheism itself holds no position beyond lack of belief.
