We went over to our local game shop because Rev was wanting to play a few rounds of pauper with some people. I sat off to myself and played Skyrim and then wrote for a little while. Smile It wasn't much, but any bit of writing these days makes me smile. ^__^

our family tradition calls for my grandmother's chocolate cake iced with Sea Foam frosting.

Sea Foam frosting is seven-minute frosting made with brown sugar.

I have committed heresy (according to my mother and my older sister) in the past by substituting maple sugar. Mea culpa, mea culpa, mea maxima culpa.

Combine:
2 egg whites
1.5 cups brown sugar
1/4 tsp. cream of tartar
1/3 cup cold water
in the top of a double boiler, place over the boiling water, and blend with a hand mixer for seven minutes.
Remove from heat and let cool for a couple of minutes
Add 1 tsp. vanilla extract and beat for a minute or two.

Pro tip: While that cake it is wonderful freshly iced, it gains some character after a day or two as it moistens the cake and the surface of the icing crystallizes a little.

And I really do love me some buttercream frosting. My wedding cake was a chocolate cake with mocha buttercream. It was the richest, moistest cake I've ever had.
The young lady who led the string quartet at the reception came over to me, a piece of cake on her plate and with her eyes wide and breathlessly said, "This is...is...like...real chocolate cake!"

This brings a smile to my face. My wife and I are going to move to Georgia. In New Jersey we are dying, due to high taxes, low wages, and extremely high over all cost of living. Jobs at entry level in GA pay more than jobs requiring experience do here. For roughly $850 a month we can get a 2 bed 2 bath apartment with a pool, fitness center, and other amenities. $850 a month here might get you a little shit hole apartment in Newark if you are lucky. Can't wait to leave this place behind.
