What is the benefit of starting those chain letters?
Does it get them money somehow?

In the days before computers.... I think there have been some chain letters that have requested a nominal amount(penny/1$) be put in an envelope of each of the five(any #) previous people on the list, then send to five more people and add their names to the list. Sometimes, it could be a request to send a local postcard to the listed. I know that artists have used the concept as part of art projects. It could incorporate anything really - a poem, a photo, a stamp... the point was to expand outreach and share.

Kind of an early facebook concept - it was a way to see how far around the country or even around the world something could get. It's an interesting concept and easy to do. To me it would really be cool now not doing it on computer, but through snail mail.

No doubt, chain email might be sent just to get into your email to get your contacts for advertising info... but I try not to think like a greedy, marketing asshole.
