You already have that, it's not his to give.
Tell him you will agree to meet with the pastor for a three discussion on the condition that the FIL will never again attempt to convert you. Never again try to convince you that Jesus is to be believed or worshipped.
Tell him the the meeting will be a private discussion, just you, your fiancee and the pastor. That you have no requirement to disclose any details of the conversation to him. That you will be respectful of the pastor, listen to him and converse as long as the pastor is respectful of you and listens as well.

Again, just my 2c, take it or leave it, i'm just offering ideas.

This is emotional blackmail. If you give in to this, it won't be the end of it. Ask him if he'd rather you call off the wedding? You also need to talk to your future Missus about this, that you don't wish to go thro with the "chat". She needs to be on your side or this marriage ain't gonna work.
