Totally agree with Stark and Dom - resting meat can mean the difference between an okay piece of meat and an awesome piece of meat.

I used to love Porterhouse. NY Strip party on the left, tenderloin party on the right. But now I prefer sirloin. I think it has more flavor. And Costco's got USDA Prime sirloin at $5.99/lb. Never realized the difference between Prime and Choice was as big as it is. The Prime sirloin melts in my mouth even better than the Choice tenderloin.

Now where's that fucking cow that wanders around here. Drooling

The difference is HUGE!!!!! To the point where I prefer having it less often but when I do I buy the good stuff. Once you get spoiled with the USDA choice, there is no way back.

Had some T-bones the other day. Let em come up to room temp then did a light dusting of salt about 30 mins before cooking, little pepper right before tossing them on my grill pan. Med rare with baked potatos and corn on the cob.
