Yes layers and layers of tightly bound paper can stop a bullet...I guess any book that is roughly the same thickness would work...

But I guess people are more likely to carry around a bible than a copy of Moby Dick everywhere they go.

That's really the answer. All atheists should carry copies of Moby Dick in their pockets in case we're shot.
