I like Bucheron. Dodgy I know, I know; it's goat and so it has a teeny bit of that goat zing but, mostly in the middle white, cake-like part. After a bit of aging, it also mellows a bit.

The outer edge just under the rind is the grayish gooey part that gets gooier and larger with age... this and the rind are actually quite mellow and my very favorite parts.

It's always sold in round medallions so you'll always get each part, each with very distinct textures. If you google it, you'll see it in rounds.

You may also like Brie a very soft cows milk cheese. Very mild it can be melted or eaten plain on toast or crackers. The rind is edible but I am not a fan of the texture so I tend to cut it off.

Stilton is probably the best of those but it is a bit strong for a neophyte. Once you expand into stronger cheeses Stilton is a definite must try.

I like Brie quite a bit. I've eaten the good versions of the grocery store cheeses too, (Monterey, Swiss, etc.) but I haven't tasted a blue cheese I liked yet. Possibly just cuz I'm noob though.

I'm going into town tomorrow. I plan to visit the butcher, who carries quite a few quality cheeses. I shall bring a list from you guys and see what I can get a hold of.

.......and tomorrow night, we taste cheese!!

So many cats, so few good recipes.
