TRUE FACT.

Stilton is probably the best of those but it is a bit strong for a neophyte. Once you expand into stronger cheeses Stilton is a definite must try.

My fave Blue cheese is Gorgonzola from Italy.

Stark, there is a whole world of cheeses out there, thousands, you can't be missing out on all that! You need to start exploring, your taste buds will thank you for it.

Any thread I am on.

Would be, "the only interesting one, on the website".

By definition.

Reddit

A formerly, "atheist website".

Made the mistake, of inviting me.

They created, my own subreddit.

http://www.reddit.com/r/MarkDreher/

And I

Disemboweled them.

With it.

It was for their own good.

For five years, "Atheism", was a "default subreddit".

And on the front page, of Reddit.

Like it was normal.

And naturally, that ENRAGED me.

I, can wipe out atheists, so easy.

So, I started doing that.

Asses to elbows.

Blah blah blah.

One year later..

And they capitulate.

That house of cards

Falls.

"Atheism"

Is no longer

A "default subreddit".

It is not

On the front page.

And, you will have to do "a search".

To even find it.

You are welcome.

Hey, you guys wouldn't mind if I changed the name of the thread to:

The Cheese Thread II; A Rebirth.

Wouldja?

So many cats, so few good recipes.

Right. When that mugshot appears on the newscast to the sound of "before turning the gun on himself", I'll shed a single tear for the self-evidently woefully inadequate mental health system in whatever benighted, suffering part of the world Mark comes from.

On another note, stilton and gorgonzola are both fine cheeses; wensleydale makes a nice contrast to stilton. Roquefort and bleu d'Auvergne are of course great; I'm also quite partial to Bresse. Spanish cabrales is also very interesting. I wish I could remember the names of more, off the top of my head.

Of course, what I most often go for is the stuff from a (relatively) local dairy up in Temiskaming. There's a fantastic blue, but it's a bit erratic in supply; their jalapeno colby is also ace.

... this is my signature!

In general I dislike the hijacking of threads but in this case it makes sense.

I very much love very sharp cheddar but have difficulty finding it. Most generally I can find "Black Diamond" but I find it has lost some of its bite. Can anyone suggest something I might find readily to replace it.

Yes Stark Raving change the title and maybe move it to the food section.

Some people like to find the right wine to go with a fine cheese but, fruit can carry just as much weight; it's all about balancing the mellows and the tangs of both the fruits and cheeses. This can open up an entire new world of tastes for a person.

Mmm... I'm thinking right now about how a mellow mulberry wine would warm up the coming chilly evenings... and hmm... the smart bite of one of my all time favorite cheeses...

Humboldt Fog comes to mind.

Again, that grayish part is gooey, and that dark purple which runs through the cake part, is actually vegetable ash which gives it an extremely pronounced zing!
To me, this is the king of the freaky cheeses. Shy
