Strange that "peanut butter" and "banana" work well together... and yet "peanut butter and banana sandwiches" and "Elvis" didn't seem to benefit from each other.

Peanut butter + Banana = Delicious
Peanut Butter and Banana + Elvis = Death

Perhaps Elvis is a volatile component, not to be mixed with anything.

Lay the salmon (skin down) in the cedar plank (be sure to soak the plank!)
Mix 1tsp to 1tbsp of cayenne pepper (depending on how spicy you like it) with 1 cup of brown sugar. Add a pinch of black pepper if you want a little extra kick.
Use the cayenne pepper and brown sugar as a rub and coat the entire surface of the salmon (minus what is laying down on the plank) on the salmon.
Toss it on the grill till it's done. It caramelizes, keeps the moisture in and it's freaking tasty.

Skin will stick to the plank and the good bit of the salmon just strips right off, moist and easy to pull off.


I brush the skin with olive oil and it won't stick. I like to keep it on although I don't eat it, it keeps things nice and moist. I love grilling with planks.
