When I started to get quality syrup as an adult I would store it in the cupboard just like my parents, but it would go bad. So now I put it in the fridge and it lasts about 1.5 yrs. That's my experience. The pic Chas posted says keep refrigerated. Yours doesn't say anything on the can Smercury?

I've always poured the can into a jar as soon as it's opened. Then stored in the fridge.

How the hell does a can of syrup last a year and a half though?? I'm lucky if a can lasts a month! Lol

So many cats, so few good recipes.

I manufacture maple syrup - but don't put it in steel cans - but in pint and quart glass jars.

I've had some unopened - that went four years without a problem. Once open - refrigerated it'll keep for quite a while -- however - I use it up in a month or so - as I'll use it in cooking as well as on waffles, french toast or pancakes.

It's easy to be extravagant with it - when my personal stash for the year is three gallons minimum....
