I'm vegan. I just don't like the consistency of meat, so easy for me. But I understand how it's not that way for everyone. Big Grin

As leggy as my plants got, they are loaded with tomatoes.

I made this easy peasy sauce and served it over linguine:

Served with a side salad from the garden. My lettuce is mostly done now Sad so sad

I sometimes tease vegetarian friends but really I think they are being very responsible in terms of sharing the biome with other species which makes it more likely that we preserve more of the diversity of life. I'm just weak and like meat.

L-veggie fajitas with zucchini, onion, mushrooms, peppers, fake cheese, avocado, and refried beans, salsa, corn tortillas

D-I'm going to roast some eggplant, quinoa, and tahini, or hummus.
