Final Fantasy without a doubt. Nearly all the games have excellent soundtracks.

For the record, just put down the composer, Jeremy Soule. Here's some choice bits from his Wikipedia page.

After composing the soundtrack to Secret of Evermore, he left to join Humongous Entertainment, where he composed for several children's games as well as Total Annihilation, his first award-winning score. Several of Soule's soundtracks have been created both credited and uncredited with the help of his brother Julian Soule, who works for Artistry Entertainment. His favorite type of game to compose for is ambitious games by people with new ideas, rather than any specific genre.

He's worked on the Elder Scrolls series, in addition to Star Wars: Knight of the Old Republic, Prey, the Guildwars series, the Company of Heroes series, Icewindale series, Dungeon Siege series, Bauldurs Gate: Dark Alliance, Giants: Citizen Kabuto, Warhammer 40K: Dawn of War, Metal Gear Solid: Peace Walker, among many others.

Also, he did Secret of Evermore. Fucking Secret of Evermore.

I loved that goofy game, which for the record was a Squaresoft action-RPG for the SNES akin to the Secret of Mana series in gameplay.

Ditto for FF VI soundtrack and game in general, with original 1999-2005 Everquest, but EQ didn't have the most memorable of soundtracks. As for FF, even if the particular game was not that great, the soundtracks always delivered when Nobuo Uematsu was composing.
