Tonight I'm making Mondongo.

It's like the Dominican version of menudo (although my hubby is Puerto Rican). A little beef tripe, some calabaza (squash), potatoes, lime juice, calf's feet (sometimes pig's feet), garbanzos, yautia, all with my special Puerto rican spice mixes (I make my own recaito, sofrito, and adobo).

A stew worthy of a PETA protest!Drooling

Gotta start making it when I get home after work though. It takes about 3-4 hours. I know there is a 90-minute recipe out there, but I have a feeling it's not as good as my recipe.

2 eggs over easy, buttered toast, 3 slices of bacon, 3 sausage link for each of us. With a choice of milk or orange juice. ( I forgot was orange juice was Undecided )
