Sushi is all about the rice. You can use veggies or thinly sliced meat in place of the fish.

Yeah you read that correctly, I make sushi. I am making a salmon rolls and Tuna rolls.

Are you allergic to shellfish? If not you can make sushi using shrimp in many ways. Crunch rolls are one of my favorites. There are also many types using soft shell crab when it's in season.

There are vegetarian varieties as well. Cucumber rolls can be tasty if done properly. Inari-zushi is also very tasty and can make a nice dessert.

Only some kinds if sushi are terribly difficult to make, like cut rolls. Temaki (hand rolls) are much easier to make. And, of course, sashimi is the easiest. Simple sushi (slab on top of cube of sushi rice) isn't too terribly difficult.

Try an avocado sushi with sesame seeds in it, gives it a great crunch with a creamy texture. SOOOO GOOD!!!!!

I recommend the Crunch Roll: standard cut roll with shrimp tempura inside and a liberal coat of tempura crumbles on the outside. If you get it at a good place it will be drizzled with both eel sauce (same stuff you get on unagi) as well as the sort of smoky "mayo" they put on okonomiyaki. Delicious!

Also, have you tried unagi? They make good sushi rolls also.

There are also some sushi places that make "baked" rolls. Alaskan salmon can be tasty in this format. I've also seen deep fried rolls.
