I almost always brine my pork chops, it prevents the meat from becoming too dry, but I'll only bother with the thicker cuts (like the triple thick ones I made earlier this week that led to my shopping adventure). Smile

We also brine the turkey for thanksgiving too.

I used to spend a fortune on expensive turkeys then I discovered brining.

No, let me explain to you how meals work in my world.

If you eat a full meal between 6-11 AM, you're eating breakfast.

If you eat a full meal between 11-3, it's lunch.

If you eat a full meal between 6-11:30 PM, it's dinner.

If you eat a full meal between 3-6, it just means you missed lunch and are making up for it with either a late lunch or an early dinner. But this "lupper" thing does not exist. Oh, and if you eat both breakfast and lunch food at the same time, you aren't having brunch, you're just insane. You're also insane if you have a full meal after 11:30 PM.

I had French toast and bacon for dinner last week. I had eggs and hash for dinner 3 days ago.

Yup. Forgot about them and ended up cooking to 160F instead of 145F but they were just as juicy and not dry at all.
