My family fights over the mirepoix. We also fight over the giblets from the chickens, so I guess we're not terribly typical.

This one wasn't a real mirepoix though. Only the celery went in from the start. The carrots and taters are added later, then onions last. Keeps a firmer texture for the veggies, and I don't find I need much from the veggies to boost the gravy.

I parboil the veggies before putting them around the roast. That water gets saved and used for making the gravy.

I steam peas or beans, and use the leftover drip water for gravy too. Good call Chas.

Sometimes, especially when I have peppers to add to the mix, I'll marinate the veggies for an hour. Even if it's just in Italian dressing and the sear drip from the roast. Gives the veg a bit of extra flavor, but really adds some flavor to the gravy.

Spaghetti tonight - with made from scratch spaghetti sauce from tomatoes, onions, garlic and peppers from the garden, ground beef and italian sausage, mushrooms, some tomato paste, fresh herbs from the pots growing on the deck.

Got my fall garden in and lettuce is already good for the picking, so I'll have that, still have tomatoes on the vine and fresh peppers and cucumbers, some onions and various greens to add in. I'll chop all but the lettuce and greens into 1/2 inch or so cubes. That's the salad.

If I feel ambitious I'll make some baguettes in my bread machine too.
