OK: this is what you do: Get yourself some nice pork chops with the rind (fat layer) still on them. Rub salt into the rind. Stick em under the grill on both sides until they're done. *Then* you stand them on their edge so that the fat layer is near the grill (helps if your grill pan has a grid that you can use to support them, otherwise I tend to get very Heath Robinson with forks and skewers to get them upright), and stick 'em under the grill for a few minutes more. Don't let it burn - it can burn a bit but not too much. But the crackling is done when it bubbles a bit and goes quite dry. I'd recommend checking on the net to see what it should look like and other peoples' recipes for the perfect crackling.

This is the only righteous and good way to eat pork chops. For more righteousness points you need to cook up some apples in a pot with a couple of cloves, mash them, and make apple sauce to go with it.
